Sloppy Jacks

- 1 can of jackfruit (in water) (550g)
- 1 tbsp nutritional yeast
- 1 tbsp savory spice blend
- ½ tsp smoked paprika
- ½ tsp chilli powder
- ½ tbp oil
- 2½ tbsp water
- 1 small red onion
- ½ red pepper
- 170 g of tomato passata
- 2 tbsp sweetener (like agave)
- 1 tbsp mustard
- bread
Instructions
- Drain, rinse and dry the jackfruit. Remove any hard pieces of the core. Mix in a bowl with nutritional yeast, spice blend, paprika, and chilli powder.
- Heat 1/2 tbsp of oil in a pan. Add chopped onion and paprika, cook about 5 minutes, gradually adding in 2-3tbsp of water. Add the tomato passata, sweetener, and mustard. Then add jackfruit and reduce heat to low. Cover and simmer for 25-30 minutes, stirring & added more water if needed. Uncover for last 5 minutes to thicken the sauce.
- Serve on bread with a side of coleslaw.
